The dish Salmon Patties is a smart way to recycle cooked fish. This time, I had baked salmon from a few days ago. The extra few minutes are so worth it compared to just simply reheating leftovers.  If you don’t have any leftovers you can use canned tuna or salmon just be sure to drain any oil or liquids out. This is good when portioned small as an appetizer or bigger as a burger patty.  I paired this with roasted sweet potato fries which are rich in vitamin A, as well as a 50% lower glycemic load than regular potatoes. It also provides fiber that is important in maintaining gut health. Baking this dish makes it healthier than if you fry it in oil.  To round up your perfect dinner, make a small salad filled with your favorite greens, tomatoes, cucumbers, and any other vegetables you want.  Just make sure you are not using a very rich dressing.  My all-time favorite is a balsamic reduction or balsamic glaze.

Salmon Patties

  • 8 oz flaked leftover salmon
  • ¼ tsp garlic power
  • Fresh cracked black pepper
  • 1 tbsp olive oil
  • ½ bell pepper, minced 
  • ½ medium onion, minced
  • ½ cup panko or any plain bread crumbs
  • 3 large eggs, lightly beaten
  • Juice and zest of 1 medium lemon
  • 1 tsp Worcestershire sauce
  • 1/4 cup minced fresh parsley

Directions:

  1. Preheat oven 425F
  2. Saute onion and bell pepper in oil until soft.
  3. Combine all the ingredients in a bowl until well incorporated. 
  4. Shape it into patties and place it in a parchment-lined sheet tray.  
  5. Bake for 10-12 minutes.

Tartar Sauce

  • ½ cup mayonnaise
  • 1 tbsp pickle relish
  • 1 tsp dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 tsp lemon juice

Directions:

  1. Combine ingredients in a small bowl and stir until well-blended and creamy.
  2. Season with a pinch of salt and pepper. 
  3. Taste then adjust with additional lemon juice, salt, and pepper. 
  4. For best flavor, cover and store in the refrigerator for at least 30 minutes.
  5. Keep in the refrigerator tightly covered for a week.

Roasted Sweet Potato Fries

  • 2 large sweet potatoes, cut into ½ inch batonettes
  • 2 tbsp olive oil
  • ¼ tsp paprika
  • Salt and pepper to taste

Directions:

  1. Combine everything together in a bowl making sure each piece is well coated with spices and oil.
  2. Lay the fries flat in a single layer in a  parchment-lined sheet tray.
  3. Bake for 30-40 minutes or until some sides caramelize.
