In partnership with Destileria Limtuaco & Co., Inc., the Philippines’ oldest distillery, Long Bar presents six meticulously crafted cocktails that pay homage to the city’s vibrant history and distinct neighbourhoods.
From 7 March to 31 May 2025, guests are invited to savour the unique flavours and stories woven into each concoction, each representing a beloved Manila local. This immersive experience celebrates the city’s cultural tapestry, using premium sprits from Destileria Limtuaco & Co to create a truly unforgettable tasting adventure.
The “Dear Manila” journey commenced with a special launch event featuring guest bartenders Aaron Aw and Jimmy Munsayac from Destileria Limtuaco & Co., Inc. Witness the unveiling of this liquid love letter to Manila, as these experts showcase the inspiration and craftsmanship behind each cocktail.

A Taste of Manila’s Iconic Districts:
Escolta: A refreshing blend of Manille Liqueur de Dalandan, Cinzano Prosecco, and delicate sampaguita sorbet, capturing the elegance of this historic street.
Quiapo: A bold and savory mix of Bonifacio Pure Pot Still Rum, Manille Liqueur de Calamansi, Pomelo Oleo, calamansi lime, and a unique scad meat black air, reflecting the vibrant energy of Quiapo.
Binondo: A fusion of tea-infused Palawan Blanco White Rum, Paradise Mango Rum, Siok Tong herbal wine, tropical cordial, and a delightful churro accompaniment, representing the rich culinary heritage of the world’s oldest Chinatown.
Intramuros: A rich and decadent concoction of Napoleon VSOP, Intramuros Liqueur de Cacao, spiced orange peel crème, evaporated milk, and cheese, evoking the grandeur of the Walled City.
El Poblacion: A vibrant and tropical mix of Empire London Dry Gin, lemongrass syrup, coconut cream, and lemon juice, capturing the lively spirit of this entertainment hub.
Cubao Expo: A complex and intriguing blend of Napoleon VSOP, Amadeo coffee liqueur, Campari, Laphroaig Islay Whisky, Rosso, cinnamon, and bitters, reflecting the eclectic and artistic vibe of Cubao Expo.
